Green Rice Recipe

Green Rice
Recipe from the Gift Horse restaurant in Foley, Alabama

The recipe is a good way to get your kids to eat spinach. It's delicious, and there aren't many things that cheese can't hide :) It's a good recipe to fix for a pot luck or carry in dinner. If you have one of those casserole dishes that has the heating pack to put in the microwave (to keep the food warm) this is a good recipe for that. My sweet sister, Judy Drewett, from Tx. gave me this recipe years ago.

Note: make sure your rice is not overcooked because it will cook more in the oven.

Green Rice Casserole

1 - 10 oz pkg frozen spinach, thawed 
2 cans cream of mushroom soup
(To make this casserole gluten free, but GF soup)
2/3 cup salad oil
2 eggs, beaten
4 cups cooked rice
1 - 5 oz (small) can evaporated milk
1½ cups grated cheddar cheese
2 small cans mushrooms, drained (Note: would be even better if they were fresh and sauteed in butter)
1 large onion, chopped
 (about ¾ - 1 cup)
¼ - ½ more cheese to
sprinkle on top

Put thawed spinach in a colander and press on it to drain & make sure all liquid is gone.
Mix spinach and both cans of the mushroom soup. Add salt and pepper to taste. Combine oil and eggs and add to cooked rice, along with spinach mixture. Then add remaining ingredients (milk, cheese, mushrooms and onion) Turn into greased shallow baking dish and sprinkle more cheese on top. Bake at 350ยบ  for 1 hour. If doubled, this will have to cook longer. Serve immediately.

  1. Hi MaryJane, its Renee here from Ravelry saying hello. I love that you include recipes on your blog as I too like to cook--although not often enough--and am always happy to try anything new that anyone offers to share.
    So Green Rice Casserole will be my new dish for a pottery group gathering we're having at the end of June, and served in our new dishes!
    Shall post fotos of that for you when the time comes.
    So glad you've reintroduced me to crocheting as well as I think that's going to be my new 'thing' for using up A LOT of wonderfully stashed woolen treasures I've had in my closet for far too long now. We're entering winter here in Oz so it'll be the perfect way to bunker down in the evenings and keep myself warm and busy. Ah, a bit of yarn, music, wine and chocolate will get me through this chilly Australian time of the year.
